Cream of Mushroom w/ a Twist?!?

How many of you enjoy the creamy, savory taste of Cream of Mushroom soup? I have to admit, although it’s really bad for you it tastes really really good. There are “light” or fat free versions of this soup out there on the market, but if you’re gonna eat it you might as well go for the gold, right? Heck yah!

Now imagine if there was a Cream of Mushroom soup that you could eat that’s neither Light or Fat Free, would you still do it?

Now you can!

Paleo Cream of Mushroom Soup

Here is the Paleo Cream of Mushroom Soup Recipe:

  • 1 avocado
  • 1 tomato (chopped)
  • 1 medium onion (diced)
  • 1 red pepper (chopped)
  • 1 cup of mushrooms (sliced)
  • 1 clove of garlic
  • 1/2 juice of the grapefruit
  • 1/8 cup of chopped basil
  • 1 tbsp. olive oil
  • 1 tsp. Trader Joe’s 21 Seasoning Salute ++
  • 1 tsp. garlic salt ++
  • 1 tsp. pepper ++
  • 1 cup of hot water*

*Optional: You can also use 1/2 cup of Organic Free Range Chicken Broth + 1/2 cup of hot water

++ Recommended: Use the seasonings according to your taste preference.

+++ You can add celery, carrots, or other veggies to this as well.

1. Warm up a small pot and add the olive oil.

2. Saute the tomato, onions, mushrooms, and sweet peppers and add Trader Joe’s 21 Seasoning Salute, garlic salt, pepper (as much or as little as you like), and basil.

3. Blend 1 avocado, the juice from 1/2 of a grapefruit, 1 clove of garlic, and 1 cup of hot water.

4. Add your blended avocado et. al to your sauteed vegetables and reduce the heat to medium.

5. The consistency should be thick and creamy.

6. Make sure your soup is warm, and not bubbling.

7. Enjoy!

It’s not rice, but it does the job…


In my family, white rice has always been a staple that accompanied each and every meal. Once I started Crossfit, I new that white rice wasn’t the way to go. As long as I could have rice I was happy.  So I moved on w/ Brown Rice.

That sounds right, right? Wrong.

I wanted to get as much as I could from Crossfitting, and in order to perform above and beyond I had to eat above and beyond. By that I mean, the Paleo way. 

Paleo suggests to get your carbohydrates from whole fruits and vegetables rather than rice, although it is considered to be gluten free.

I have the solution for you in three words:

CAULIFLOWER FRIED “RICE”

It is so versatile. I decided to have my Cauliflower Fried Rice w/ 2 - Cage Free Fried Eggs, and some Chicken Apple Sausage (as seen above).

What would you eat your Cauliflower Rice with?

Here is the Cauliflower Fried Rice Recipe:

  • 1 medium head cauliflower
  • green onion
  • 1 large egg (optional: use only the egg whites) whisked
  • 1 table spoon garlic
  • 1 table spoon olive oil

*Optional: half cup meat of choice (chicken apple sausage is my personal favorite)
dash of salt & pepper

1. Finely chop cauliflower (or use a food processor)
2. Microwave the dice cauliflower for about 3 minutes or until it gets soft.
3. Warm pan and add a bit of olive oil.
4. Add finely chopped garlic, green onions, and meat of choice (*optional) to the hot pan.
5. Add whisked egg white into the hot pan.
6. Quickly add the cauliflower before the egg is cooked all the way and stir. This allows the egg to mix with the cauliflower for a nice flavour.
7. Once the Cauliflower and the egg is well mixed and starts getting brown add salt, pepper, and other spices of choice.

Say Paleo!

So this is it.

My very own Paleo Blog.

At first it may seem like every other Paleo Blog out there, but I’m not trying to be every other Blog. My overall purpose for this project is to share my daily Paleo creations, and to see what you guys eat too. If you look online you will find a good base to start off w/ all those Paleo cookbooks out there. For those visual learners out there, I will show you what I’m eating. =)

Everyone has different tastes when it comes to food, especially when it comes to Paleo food. What may work for you may not work for me, but I hope that my Paleo Creations will get some type of positive reaction.

I’ve been on Paleo for about 4 months now, and so far I’m enjoying it. Sometimes, I just want to kick it to the curb and eat those glutinous carbs like normal people, but I know at the end of the day, I want to look, feel, and perform better. When you have no idea what to prepare it gets difficult.There are so many ways to eat and prepare good Paleo food. So just start here.
